Uchibā Austin: February Uncommon Ramen

We're thrilled to introduce Chef Patacharapone "Andrew" Sorlaesith future exec sous chef at Uchi Charlotte as this month’s featured chef. For his Uncommon Ramen debut, he draws inspiration from his Thai and Lao heritage with a Thai-style tsukemen ramen. He is also serving Thai street food inspired tsukune, influenced by the eclectic skewers at Rule of Thirds. To round it out, he offers a leche de tigre–style ceviche evolved from his time at Rosella, featuring bluefin tuna, pomelo, avocado, and fried cashews.
