Texas Sea Grant is bringing Texas Oyster University—an interactive, hands-on experience— to this year’s Texas Indie OysterFest on Sunday, May 3, 2026, from 1–5 p.m. at The Far Out Lounge and Stage.
Led by Dr. Mario Marquez, the program invites attendees to learn oyster shucking, explore anatomy, and discover how Texas bays shape flavor, or “merroir.” The festival also features Texas oyster farms, chef-prepared dishes, live music, and a shucking competition, celebrating the flavor, sustainability, and growth of Texas’ oyster industry.
