Each course of this multi-course seated dinner is paired with a comparative tasting featuring two wines from the same producer, a current release and a library vintage.
Before each course is served, the winemaker behind the pairing will speak to both bottles — what they were chasing, what the years have done, and why these two wines belong on the same table. The chef has designed every dish around the featured wines.
